Ham and cheese polenta bake

This absolutely delicious comforting dish is so quick and easy to make. I love baking this as it fills the house with the most delicious smell.

Serves 4

Ingredients:

  1. 3 to 4 large eggs
  2. 1 large pack of bacon lardons (or cut your own from normal bacon)
  3. Two packs of ready polenta
  4. 1.5 packs of feta cheese
  5. Half a tub of plain Greek style yogurt

Method

1. Preheat oven to 180 degrees Celsius
2. Cut polenta up into small cubes – the smaller the better so that all the mix can get into every nook and crannie. Leave to one side

3. In a large mixing bowl mix the eggs and yogurt, add a pinch of salt and pepper to taste
4. Add the bacon lardons and crush the feta cheese and mix well
5. Finally add and mix in the polenta

6. Pore mix into oven safe baking tray and pop into the over for 30 to 40 minutes

Serve on it’s own or with a fresh summer salad.
